Bold New Mathematical Cake Designs by Dinara Kasko



Since we last checked in with Dinara Kasko, the Ukrainian pastry chef has continued to innovate at a dizzying pace. She further incorporating her use of mathematical algorithms and 3D printing into her baking process. Many of the cake designs begin as a collaboration with mathematicians who help develop the patterns she then utilizes to print special molds.

You can order the silicone mould at www.dinarakasko.com/shop/ The shape looks very cool, and you want to bite off one of the balls. 😊 Suitable for glazing and covering with chocolate spray, but I’d advise you to dip the cake in the glaze, as shown in the video. Photo from my class in Bangkok in @sweetobsessionbkk . Bangkok class turned out to be both exciting and challenging experience. High temperature and excruciating humidity covered my fresh-out-of-mold cakes with snowflakes within 10-15 seconds. It was nearly impossible to airbrush the cake after about a minute. Uncontrollable heat thawed every piece during the first final presentation, so I dramatically increased gelatin ratios during the second class. Try walking in my shoes – that's what they say! Our groups were amazing. People were extremely cheerful, engaged and opened to new ideas. I did not notice any difference between my local vs. Asian students. Executing on my recipes with French-only ingredients was definitely a breathe – thanks to Pam 😘 It was a bit of a challenge to conduct full day classes six days in a row in English as nobody spoke Russian. First time ever teaching in English, forced to explain myself in creative ways, so many lessons learned! Despite a few hiccups, the team and I did execute on the plan, prepared amazing final presentations, sequences tasting of each piece – followed,as usual, by team discussion. It's always sad to leave – having bonded with the students – but I can always come back! P.S. Students always expect me to bring all possible silicone molds. @dinarakasko Geometrical kinetic tarts. This work is the result of collaboration with José Margulis @j.margulis Great talented artist from Venezuela who works with Geometric abstractionism and Kinetic art. I tried to transform his creations, made of plastic, aluminum and acrylic, into something edible, using basic techniques and ingredients.
